START WITH A DRIZZLE
Sweet-Heat Starter Guide
One honey-to-chili ratio, simple heat adjustments and six practical meal ideas — free to read without signing up.

The basic ratio
Our base recipe uses 1 cup honey to 1 tablespoon fully dried chili flakes. Warm gently for 5 minutes, without simmering or boiling, then steep off the heat for 20 minutes. Chili strength varies: this is a starting ratio, not a guaranteed heat level. Follow the full Homemade Hot Honey recipe for ingredients, timers and storage guidance.
Adjust a portion, not the whole jar
- For gentler heat, dilute a small serving with plain honey or use fewer flakes in your next batch. Straining does not remove heat already infused.
- For more heat, add flakes gradually in a future batch. Do not boil honey to chase intensity.
- For a tangy finishing glaze, add lemon juice or vinegar to a separate portion for that meal. Do not add fresh garlic or fresh peppers to the storage jar.
- Taste using a clean spoon and offer the drizzle separately so each person can choose.
Six easy places to start
- Pizza: drizzle after baking.
- Roasted carrots: use a mild honey at the finish.
- Whipped feta: finish the chilled dip just before serving.
- Grilled cheese: keep honey inside the sandwich.
- Salmon: reserve a clean portion of glaze for cooked fish.
- Vinaigrette: shake with Dijon and vinegar, then dress just before serving.
Keep it safe
Use a clean, dry jar and refrigerate the homemade infusion. This is not a validated shelf-stable or canning recipe; make small batches for prompt use. Never give honey to children under 12 months. CDC guidance · Safe cooking temperatures.
