How to balance sweet and heat

Build flavor with honey, chili, acidity, and a little restraint.

How to balance sweet and heat

Build the heat slowly

Chili strength varies between brands and batches. Begin with less chili, steep, and taste with a clean spoon. You can always add more; removing heat is much harder.

Make a separate finishing glaze

A little lime juice or soy sauce can brighten a serving glaze. Mix it in a separate bowl for the meal rather than changing the whole storage jar. Keep a clean portion aside before brushing onto raw meat or seafood.

Match the drizzle to the dish

Start mild for sweet roasted carrots, medium for salmon, and hotter for wings. Use small amounts of a concentrated dry rub and keep extra honey at the table so everyone can find their own balance.
